This is quite interesting, they don't seem to have any kind of recording device inside, do they hook up to a VCR or something like that?

Yes, this cameras used to be connected to a portable device with batteries and some kind of recording unit. This was before VHS was invented AFAIK. Very early units recorded only b/w and were made by philips, sony and others.
